Welcome to the 1950s barbecue sauce compendium!

Shortly after WWII, there was a boom in 40-hour-week, white-collar jobs, leading to more disposable income nationwide. Many Americans used their money to buy homes away from the city in newly constructed suburban tract housing developments, driving to their city jobs in their cars they could now afford. Most of these houses came with their own private backyards. With the fresh availability of supplies that had been previously hard to get because of the war (aluminum and concrete), many people customized their backyards with patios and pools, making their own little oasis where they could host get-togethers, cook food and relax. Advertising and culture caught on and soon the backyard became the status symbol of American life. Books and magazines specifically dedicated to the patio lifestyle started coming out showing how to layout and construct your own patios, pools and built-in barbecue grills and also how to entertain and cook on them.

Man has always cooked meat over fire, but the new obsession with having your own personal domain in which to do so created a massive spike in the amount and types of tools used to cook outside. Portable barbecue grills took center stage at the local hardware store, surrounded with every possible accessory to help you grill up that perfect meal. Barbecue specific cookbooks also flooded the shelves, filled with an endless amount of ways to prepare meats and what to serve with them.

Predictably, with this rapidly spreading barbecue fad came the need to be the best cook of the neighborhood. Many self-proclaimed "chefs" created their own closely guarded secret-recipe sauces to accompany their meats and make theirs the best around. It is very likely that a large number of these sauces started out as simple recipes taken from the huge amount of available cookbooks and then were painstakingly customized and tweaked to the user's own tastes.

My hope is to catalog as many barbecue sauce recipes as possible from these cookbooks and feature them here so that people can see what the popular trends and ingredients were when the backyard cookout really rose to greatness. Think of it like culinary "time travel". There is a good chance that your parents and grandparents made some of these sauces!


Some notes:

For authenticy sake, try to use brand name ingredients that existed during the time that would be appropriate for the recipe. For example, both Heinz and Hunts ketchup existed in the 50s, French's mustard was the gold standard of prepared mustard and McCormick spices were everywhere. Many of the brands still available today do have slight changes such as the addition of high fructose corn syrup, but if you look hard enough you can find "no HFCS and "no preservatives" versions of some of the stuff available back then. Some recipes were put out by specific companies as a way to get consumers to purchase the particular ingredient so try to use the brand specified in the recipe if there is one. If the brand doesn't exist anymore, a quick google search should tell you a decent equivelant.

If a recipe specifies a particular meat or dish, it will be noted with the entry. This guide is meant to cover the quintessential main styles of barbecued meats like beef, pork and chicken. I have specifically left out  sauces meant for fish and other rare wild game that one would not typically find at a neighborhood cookout. If you are looking for fish fry or lobster festival ideas, this really isn't the place.

If a recipe specifies that the sauce is specifically a basting sauce versus a dipping or general sauce, it will be noted with the entry.

Some of the recipes included here aren't specifically for sauces themselves, but instead are recipes for the particular meat or dish and just happen to have the sauce listed with it. I have made every effort to include every book's recipes that include their own sauces for the sake of covering all of them mentioned in the book.

Entries are sorted by year of publishing (note will be made to redirect you to different editions of the book), then alphabetical within the year. Sauces are then listed alphabetically by the name given in the book.

This collection stops at the end of 1959 because 1960 was essentially a turning point for sauces with commercial name-brand sauces starting to flood grocery stores nationwide. (And because I burned myself out just doing the 50s decade!). You can view a gallery of 1960s barbecue books at the end of the page if you want further reading.
